Copies only the occupied blocks and rebuilds the layout on the target. Faster, and it allows a smaller SSD as long as the used data fits.

Check the boot order first, then the boot mode, then whether the old drive is still connected and being chosen. Those three account for most failures. The temptation is to buy the smallest SSD that will hold the data. Resist it slightly. Windows wants room for updates, temporary files and a page file, and an SSD that is nearly full also loses some of its write performance because the controller has less free space to work with. Leaving a comfortable margin above your used space is worth the small extra cost.
If the mechanical drive holds a large media library, a hybrid arrangement often makes more sense than one big SSD: clone the system and applications to the SSD, keep the old drive in the machine as a data volume, and point the media folders at it. You get the boot-time improvement without paying for capacity you would only use for films.
A clone copies your habits as well as your files. Half an hour of tidying up shortens the copy, makes a smaller SSD viable, and leaves the new drive with room to breathe.
Desktops make this easy: connect both drives, clone, change the boot order. Laptops usually have one bay, so the SSD sits in a USB enclosure during the clone and swaps into the machine afterwards. Two practical notes. First, USB adds time, so expect the copy to take noticeably longer than an internal connection. Second, keep the enclosure — the old drive lives in it afterwards and becomes an instant external backup.
For NVMe upgrades, confirm the machine actually has an M.2 slot of the right type before buying. Some older laptops offer an M.2 slot wired for SATA only, which accepts the card but not the speed.
